Cold Brew is a cold water steeping process for coffee. It’s a unique thing. Cold water extraction gives coffee a very low level of sourness, and very little bitter flavours, for a result that could be easily tolerated also for people who suffers from digestive disorders. The real benefit of this method is the sweet natural taste, without the addition of sugar and with a good amount of caffeine.
We’we choosen HPP-Process for his preservation. It’s a food conservation and sterilization technique, through which the product is compressed by the high pressure, causing the inactivation of some microorganisms and enzymes present in the food. HPP technique has a limited effect on the covalent bonds of the product, thus maintaining his sensorial and nutritional qualities.
Such a fragrant and delicate product could not have been heated to high temperatures with the HPP-Process.
